Burrata Tomato Salad - snack alert☺️

- 2 burrata, drained
- 350 g cherry tomatoes
- 1 pot fresh basil, leaves only
- 8 cloves garlic, peeled and crushed
- 3 tbsp olive oil
- 1/2 tsp dried basil
- 1 handful pine nuts
- Salt and pepper
- 1/2-1 baguette


1. Place the pine nuts in a dish that fits in your Airfryer and toast them for 4-5 minutes at 160 degrees. Or toast them on a fry pan.
2. Slice the baguette thinly, brush/spray them with a bit of oil, sprinkle with salt, and place them directly on the rack at the bottom of your Airfryer, possibly in two batches. Bake them for about 8 minutes at 180 degrees. Set the bread slices aside on a rack. You can also toast them on a pan.
3. Place the tomatoes in a dish that fits in your Airfryer (or oven)
4. Drizzle the oil and dried basil over the tomatoes, season with salt and pepper, and add the crushed garlic. You can crush the garlic with the blade of your knife, a cup, or similar.
5. Bake the tomatoes for about 8-10 minutes at 190 degrees, then let them rest for a couple of minutes outside the Airfryer.
In oven at 200 degrees for about 14 minutes.
6. Meanwhile, place the two burrata cheeses on a plate, open them up well, and sprinkle the fresh basil leaves over the entire plate.
7. Add the baked tomatoes and garlic, and pour the oil/juice from the baked tomatoes over the burrata cheeses.
8. Season with freshly ground pepper, sprinkle with pine nuts, and serve with the crispy bread slices.
